Salmon Roulade

Ingredients for the Champagne Sauce:

3 stalks lemon grass

5 shallots

5 cloves of garlic

1 liter Champagne

½ cup powdered sugar

1 cup heavy cream

 

For the Merlot Syrup: (drizzle)

1 cup sugar

1 tsp water

1 liter Merlot

 

For the Crawfish Cakes:

1 lb crawfish - cleaned

5 lemons

5 tbs mayonnaise

1 tbs dijon mustard

½ cup Old Bay

½ cup parsley

2 tbsp worcestershire sauce

1 cup Panko Japanese

bread crumbs

1 stalk celery (to taste)

Method:

For the Merlot syrup, reduce the Merlot to a glacé in one sauce pan. In another sauce pan, make a simple syrup from sugar and water. When that syrup begins to show larger rapid bubbles (called a gastrique consistence), combine syrup and glacé in a third saucepan.

For the Champagne sauce, reduce champagne with diced shallots, garlic and lemon grass by ¾ in a pan. Add heavy cream, reduce by ½. Add powdered sugar and reduce until it reaches consistency.

For the crawfish cakes, mix all wet ingredients first, then add the rest, forming small cakes. Sear on a hot sauté pan with olive oil. Flip and bake at 350º for give minutes.

For the salmon roulade, place a filet of salmon in a ringmold, fill with extra crawfish mix, bake at 350º for ten minutes.

Place salmon roulade on a champagne sauce as shown, top with crawfish cakes, drizzle with merlot syrup. Enjoy!
